Ghiya is easy to make and its very nutrious for health too.
Ingredients :-
- 1 bottle gourd (about 2 cups of diced bottle gourd)
- 1 cup diced onion
- 3-4 garlic cloves
- 1 cup diced tomatoes
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 Green chili
- 1 tsp Ginger paste
- 1 tsp Coriander powder
- 3-4 curry leaves
- 2 tablespoons chopped coriander leaves
- 1 teaspoon Vegetable/Sunflower oil
- 1 cup water
- Salt to taste
- Wash and cut the Ghiya into small pieces and boil it in cooker for about 1 whistle and then cook it on a slow flame for about 2 minutes.
- Heat oil in a pan, add cumin seeds,mustard seeds, Green chili, Finely chopped garlic cloves, Ginger paste and cook it for 2 minutes.
- Add onions, sauté for a few minutes, add all the spices to this mixture.
- Add finely chopped tomatoes and 1/2 cup of water, cover it with a lid and cook on a slow flame for about 5 minutes.
- Add boiled ghiya and 1/2 cup of water, Cover it with a lid, keep on stirring it in between till water is evaporated (Approx 10 minutes).
- Garnish it with freshly cut coriander leaves.
