Delicious Sabudana Khichdi (Sago flavoured with chilli-peanut powder)

The first time ever that I made Sabudana Khichdi, Today was 8th day of Navratri so me and my husband have both kept fast,I did get sabudana on Sunday but had never made it so was undecided wether I should try it or not , today morning when I was on call with mom she gave me sabudana recipe which I found very simple to make and luckily I had all ingredients to make it.I remember as a child I  never used to like it but today when I made it myself I found it so delectable So I'm sure to make it again :) Sabudana Khichdi is a pretty tricky proposition It matters how you soak the sabudana and one should not soak for too long, or in too much water that all you get is starchy mush, or on the other hand, a little less water and it would roll off like balls of mercury away from  your palm.Here I am posting my tried and tested method of making this amazing khichdi.
Ingredients:-
  1. 2 cups of Sabudana.
  2. 4-5 tbsp of raw peanut powder
  3. 4-5 Green chili finely chopped
  4. 2 Medium potatoes cut into big pieces
  5. 1 tbsp cumin seeds
  6. 7-8 Curry Leaves
  7. 1/2 tbsp of sugar
  8. 1/2 cup finely chopped coriander
  9. 2 tbsp of lime juice
  10. 1 tbsp of red chili powder
  11. 1 tbsp of oil
  12. Salt to taste.
Method :-
  1. Toss the sabudana into a big bowl and wash it under the tap. Allow it to drain 
  2. Keep it this way for 2 hours at least covered with a lid, after an hour  just toss it but don't touch it with your hands or spoon
  3. Just before cooking add 1 1/2 spoons of salt to the sabudana as it soaks up the salt really well.
  4. Boil the potatoes and cut it into large pieces or just coarsely mash with your hands into big pieces.
  5. Take a Pan, add oil to it, once heated add cumin seeds, green chili and curry leaves, let it cook for a while.
  6. Add groundnut powder to this mixture and keep the flame very low and keep on stirring it for abut 2 minutes.
  7. Add boiled potatoes to this mixture mix it well and let it cook for about 5 minutes.
  8. Now add soaked sabudana to this , mix it lightly, add red chili powder and sugar to this mixture.
  9. Cook it on a low flame by covering it with a lid and constant stirring for about 20 minutes.
  10. Garnish it with a dash of lime and finely chopped coriander leaves.
  11. Serve hot with curd by its side.

Butter Popcorn

Its a snack which all of us munch and pop while watching movies: Pop corn. A home made, easy to cook pop corn and its fresh.Thanks Ankur for sharing your recipe with me :)
Ingredients :-

  1. 1 cup Corn seeds (make sure they are for pop corn)
  2. Butter
  3. 1/4 spoon turmeric powder
  4. Black salt (if possible), if not normal salt to taste.
Method:-

  1.  Put some butter into cooker while its heating on medium flame.    Alternatively oil can also be used.
  2.  Once butter melts and cooker is heated, put the corn seeds, turmeric and   salt in it and shake / stir it well so  that all corns and butter is spread equally.
  3.  Cover the lid of cooker leaving a small opening for steam to flow out. This is to avoid corns popping outside.
  4.  As the pace of popping slows down, which means its done. Enjoy home  made butter pop corns.

Gram flour Dosa ( Besan Cheela)

It was a Friday evening and I was not sure what to cook we wanted to have something light, so my husband came up with the idea of making Besan Cheela, it's light and hardly takes time to cook.So I collated all things I would need to make it and we made it together.



Food items prepared with gram flour are very tasty.It tastes mildly sweet, it’s also gluten free and famously known for its anti-diabetic properties.After bajjias and pakoras, my next favorite item with besan is dosas. Besan Dosa is a traditional Indian breakfast and evening snack item, prepared by mixing gram flour with a variety of finely chopped vegetables. The dosas are usually served with chutneys, It's  quite easy to prepare and one can experiment with ingredient quantities quite liberally.They are not that good when they get cold, so prepare them just before mealtime.
 
Ingredients :-
  1. 2 cups of gram flour
  2. 1 big onion,
  3. 2 green chillies,
  4. 2 tbsp of cilantro - finely chopped
  5. 1 tomato finely chopped
  6. 1 cumin seeds
  7. 1 tsp of carom seeds
  8. 2 tbsp of roasted semolina
  9. salt to taste
Method :-
  1. In a Bowl add cumin, ajwan,semolina and salt. Mix to combine.
  2. Add the finely chopped vegetables. By gradually adding water, about 1 to 2 cups, mix and prepare besan batter to a medium-thick pouring consistency, like idly batter.
  3. Heat a non stick pan  grease it with half-cut whole onion.
  4. When the pan is hot, pour ladleful of batter and spread into thin round. Sprinkle half teaspoon of oil or ghee on the top. Wait for bubbles to appear. When the underside starts to brown, gently lift and turn to other side. Cook the dosa until the second side is lightly browned. 
  5. Serve it with Chutney Or Ketchup.

Oats Upma

Oats Upma is a very easy recipe and can be had for breakfast or as a light snack.When I tried Oats Upma for the first time, I wasn’t expecting it to come out too well and taste too good. It is easy for the whole Upma mixture to become soggy, soft and tasting bad if care is not taken to see the whole preparation receives the right amount of water when heating in the pan and while roasting the oats.It should be stirred continuously when you are roasting the Oats.





Ingredients :-

  1. 1 cup oats
  2. 1 medium Onion Finely Chopped
  3. 1 medium tomato finely chopped
  4. 1 medium capsicum finely chopped
  5. Curry leaves and coriander leaves
  6. 2 Green chili
  7. 1 tsp mustard seeds
  8. 1 tsp cumin seeds
  9. 1 tbsp lime juice
  10. 1/2 cup water
  11. salt to taste
  12. 1 tbsp oil

Method  :-



  1. Take a wok/pan Fry oats, dry roast the oats for about 5 min on a low flame, till you get a nice aroma of oats.
  2. Heat oil in a pan.Add mustard and cumin seeds, Once it splutters, add green chili and curry leaves and saute it for about 2 mins.
  3. Add onion and salt and let it cook for about 5 -7 mins , till it turns golden brown.
  4. Add capsicum and tomato to this and let it cook till all veggies become tender.
  5. Add oats to this and stir it well, add 1/2 cup of water and let it cook for about 5 mins by covering it with a lid
  6. Serve oats upma with a dash of lime.garnis it with freshly chopped corainder leaves.

Bread Poha ( Bread with veggies)

I was of bored having bread everyday so I thought of making this quick and easy recipe made of bread and veggies its tasty as well as healthy.

Ingredients :-
  1. 4 slices of brown bread sliced into 1 inch pieces
  2. 1 tsp cumin seeds
  3. 1/2 tsp of turmeric powder
  4. 1 tsp mustard seeds
  5. 4-5 curry leaves
  6. 1 green chili finely chopped
  7. 1 medium sized Tomato finely chopped
  8. 1 medium sized onion finely chopped
  9. 1 cup of veggies boiled ( corn, french beans,carrot, peas)
  10. 1 bell pepper..finely chopped
  11. salt as per taste
  12. 1 tbsp of lime juice
  13. 1 tbsp oil

Method :-
  1. In a pan dry roast the bread pieces for about 5-7 minutes once they are cooked a bit, keep it aside.
  2. Take oil in a pan, once heated a bit , add cumin ,mustard, curry leaves and green chili and cook for about 2 minutes.
  3. Add onion to this and cook it by adding salt till it turns pink.
  4. Add tomatoes and bell pepper to this mixture. Cook it for about 2 minutes and then add turmeric powder.
  5. Add boiled veggies to this mixture, cook it on a slow flame by covering it with a lid for about 10 minutes till all veggies are cooked.
  6. Now add bread pieces to this and stir it well.
  7. Add a dash of lime and serve it hot.

Dalia Upma (Broken wheat upma )

This is a tasty and healthy recipe using dalia or broken wheat.This is a nutritious form of eating wheat as it is not refined and does not loose out on any of the nutrients that are present in whole wheat. It is a good source of the daily requirement of fiber and manganese in your food. 
Ingredients :-
  • Broken Wheat Rava or Dalia- 1 cup
  • 1 onion finely chopped
  • 1 tomato finely chopped
  • 1/4 cup boiled peas
  • Few Curry leaves
  • 1 tablespoon Ghee
  • 1 tablespoon Mustard seeds
  • 1 tablespoon Cumin seeds
  • 1 green chilli finely chooped
  • Salt- to taste
  • 1/2 table spoon turmeric powder.
  • water 3 cups
Method :-
  • In a pressure cooker add 1 tablespoon of Ghee and add dalia and roast it for 5 minutes,   then add 3 cups of water.Cook it for about three whistles.
  • Heat oil in a pan and add mustard seeds, cumin seeds, green Chilli and curry leave, cook it for about 1 minute.
  • Add onion and fry till golden brown, now add turmeric powder and salt to this mixture.
  • Add chopped tomatoes and boiled peas to this.
  • Add the roasted Dalia to this and fry for about 5 minutes.
  • Mix it well and fry for another couple of minutes.
  • Dalia is ready.Serve hot and enjoy.

Khandvi - (Gram Flour Gujrati dish )

This one is simple gujrati recipe, Simple and delicious, it melts in mouth.
Ingredients :- 
  1. 1 cup gramflour (besan)
  2. 3 cup buttermilk
  3. 1 tsp ginger green chilli paste
  4. Salt To Taste
  5. A pinch Asafoetida
    For seasoning :-
    1. 2 tsp Oil
    2. 2 tsp Sesame seeds
    3. 1/2 tsp Mustard seeds
    4. 1 tbsp Coriander finely chopped
    Method :-
    1. Mix all the ingredients (except those for seasoning) and make a smooth paste.
    2. Heat it on a low flame, stirring constantly so that lumps do not form.
    3. Keep stirring till batter becomes thick. It will take approx 10 min. Taste the batter to see if the gram flour is cooked.
    4. Grease the flat surface ( a plate) and spread the mixture as thinly as possible with spatula while it is still hot.
    5. Let it cool a bit. (Approx 2-3 minutes)
    6. Slit the khandvi lengthwise. Carefully roll out each strip.
    7. For seasoning, heat the oil and add the mustard seeds, sesame seeds and   Asafoetida Stir for 1 minute..
    8. Pour over the khandvi and serve garnished with coriander.

    Vermicelli Upma Recipie

    Ingredients :-
    1. 1 cup Vermicelli
    2. 1/4 tsp Mustard seeds
    3. 1 Onion
    4. 1 Green chili
    5. 1 Carrot grated
    6. 1 Tomato
    7. 2 cups Water
    8. 1 tsp Oil
    9. 4  Curry Leaves
    10. Salt to taste
    11. 1 tsp of lime juice
    Method :- 
    1. Chop the onions, chillies and tomatoes into small pieces and keep aside.
    2. Heat oil and add mustard seeds and curry leaves. When they start to crackle add onions, fry till they turn golden brown.
    3. Add grated carrots and fry for 4-5 minutes, then add tomatoes.Cook until they are done.
    4. After that add salt and 2 cups of water, cover with a lid and let it boil .
    5. When the water comes to boil add vermecelli and simultaneously stir ( so that no lumps will be formed).
    6. Cover the upma with a lid for 5-6 minutes 
    7. Serve hot with a dash of lime.

    Poha ( Beaten Rice ) Recipie

    Poha, made from flattened rice, is an easy-to-cook, nutritious snack. It is often eaten for breakfast or brunch.


    Ingredients :-
    1. 2 cups poha (flattened rice)
    2. 2 tbsps vegetable/ canola/ sunflower cooking oil
    3. 1 tsp mustard seeds
    4. 5-6 curry leaves
    5. 2 green chillies slit lengthwise (optional)
    6. 1 medium onion chopped fine
    7. 1 medium tomato finely chopped
    8. 1 large/2medium potatoes quartered and sliced very thin
    9. Handful of unsalted peanuts (skins removed, optional)
    10. Pinch of turmeric powder
    11. Juice of 1/2 a lime
    12. Salt to taste
    13. Chopped coriander to garnish
    Method :-
    1. Put the poha in a sieve and wash under running water for 2 minutes. Keep aside to drain.
    2. Heat the oil in a pan on a medium flame and add the mustard seeds, curry leaves and green chillies.Fry till the spluttering stops and then add the onion. Fry till soft and translucent, then add tomatoes.
    3. Add the peanuts and potatoes and stirring frequently, cook for 2-3 minutes.
    4. Drain the poha completely to remove all water and add it to the above mix. Add the turmeric powder and stir well to blend all ingredients.
    5. Cook for another minute. Turn off the fire. Pour lime juice over the poha and mix well.
    6. Garnish with chopped coriander and serve while hot.

    Corn Upma ( Khichu )

    I've decided to write a blog about all my cooking experiences and things I cook, I'm sure it would be fun when I would look for new things I can make an experiment.

    I bought a Corn recently and wanted to make something nice , I remembered the corn upma my mom used to make so I thought of giving it a try.
    Ingredients :-
    1. 1 large corn (makai ke dane) shredded it finely.
    2. 1/4 tsp mustard seeds ( rai / sarson)
    3. 1/4 tsp cumin seeds (jeera)
    4. few curry leaves (kadi patta)
    5. 2 to 3 green chillies, finely chopped
    6. Freshly cut coriander
    7. 1/4 tsp Turmeric powder
    8. Salt as per the taste
    9. 1 tsp sugar
    10. 1 tbsp oil
    11. 1/2 cup of milk
    12. 1/2 cup water
    Method :-
    1. Heat oil in a pan and add mustard, jeera, kadipatta and green chillies to it 
        and saute.
    2. Add the finely shredded corn to it.
    3. Add water and milk and mix it well and allow it to cook for 10 to 15 mins 
        and keep on stirring it in between.
    4. Garnish it with freshly cut coriander
    5. Serve hot with a dash of lime.
